While I take issue with people's obsession with calling anything red and chocolate-y "red velvet", I had a baking contest to win, and apparently I was the only one at work that could make a half-decent cookie. Enjoy~
# Ingredients
- [ ] 2-1/4 cups bread flour
- [ ] 1/4 cup cocoa powder
- [ ] 2 tsp baking powder
- [ ] 1/4 tsp baking soda
- [ ] 1/2 tsp salt
- [ ] 1 cup granulated sugar
- [ ] 1/2 cup brown sugar, packed
- [ ] 1/2 cup unsalted butter, softened
- [ ] 2 large eggs + 1 egg yolk
- [ ] 2 tsp vanilla extract
- [ ] 1 tbsp red food coloring
- [ ] 1 cup white chocolate chips
- [ ] 1 cup regular chocolate chips
# Method
1. Preheat your oven to 350°F. Line baking sheets with parchment paper.
2. In a bowl, whisk together the bread flour, cocoa powder, baking powder, baking soda, and salt.
3. In another bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy. Beat in the eggs and extra yolk, one at a time, then stir in the vanilla and red food coloring.
4. Gradually mix in the dry ingredients until just combined. Fold in the white and regular chocolate chips.
5. Scoop tablespoon-sized balls of dough onto the prepared baking sheets. Flatten them slightly.
6. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
7. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
