This is a very forgiving recipe. You can make quite a few mistakes and it will still turn out fine. I have historically used both a stand mixer and done things by hand. You can pick whichever makes you most comfortable.

## Ingredients
- [ ] 2 Tbsp warm water
- [ ] 2 tsp active dry yeast
- [ ] 1 cup body-temp milk
- [ ] 2 Tbsp softened butter
- [ ] 1 egg
- [ ] 3 cups all purpose flour
- [ ] 1/4 cup granulated sugar
- [ ] 1-1/2 tsp salt
## Method
1. Re-hydrate the yeast in warm water
Note: Instant yeast will not bloom in milk
2. Add milk, egg, and butter to bowl, lightly beat.
3. In the bowl of a stand mixer add flour, sugar, salt, water/yeast, and milk.
4. Using a dough hook, mix into a ragged ball.
5. Let rest for 15-25 minutes. More is generally better.
6. Knead for 10-12 minutes, adding a little flour if the dough is too sticky.
7. Allow dough to sit for 30 minutes or until it has doubled in size.
8. Preheat oven to 350f.
9. Divide into 16 pieces and shape into balls. Place in a greased glass baking dish.
- 15 pieces would be ideal, as you could do rows of 3x5, but 16 is easier to do if you aren't weighing out your dough.

10. Bake for 25-30 minutes, or until golden brown.
